This weekend I went home to Connecticut for a belated Mother's Day. And what's home without the Fairfield Country favorite - Colony Grill? This pizzaria originated in Stamford, CT, and became so famous for their thin crust, lightly sauced with very little cheese, small 'bar' pies that they abandoned all other menu items in favor of only serving pizza. SMART MOVE.
The menu is very straight forward: just pick your toppings. They are famous for originating the 'hot oil' pizza - literally a spicy pepper based oil that is drizzled over your pie. Order it if you can handle the heat.
